Last night, I made Pumpkin Spice Cookies out of cake mix!
This recipe makes your cookies more soft and cake like unlike other cookie recipes from cake mix.
That is because, it's the same recipe to make a cake using these two same ingredients:
Cake mix & Pumpkin!
No need for eggs, water, and oil.
It's healthier & they're delicious.
And they make about 3 dozen !
And they make about 3 dozen !
Now onto the recipe.
I used:
Betty Crocker Carrot Cake Mix
Libby's 15oz of Pumpkin
Two Pinches of salt
Half a tsp. of sugar
About two tbsp. of brown sugar (use the amount you want)
Honey.
Make sure there's no lumps in the cake mix after you pour it into the bowl.
Add can of pumpkin and mix until it looks like a thicker version of the pumpkin.
(it takes a little while to get it mix in well)
Then add your other ingredients and mix them all in.
Scoop the mix out and drop onto greased cookie sheet.
How big you want your cookies
are how big you should make your scoop
because the way they are on the pan is the way they will be when they are done.
Bake at 350 degrees for 13-17 min, depending on your cookie size.
